OUTDOOR CHEF KURT is not as much a fanatic, about Football, as I am for NASCAR , but the games, I watched today ,were both great games. I needed to relax ,after a week of adventure, at the Shot Show, so I hit the couch ,with a couple cold brews, and got my FOOTBALL ON .

Both games were decided by the field goal kicker, one for the good and one for the bad. I am excited , about the match up, for the

SUPERBOWL , and hope it is a good game also..

DAY ONE OF THE SHOT SHOW IN LAS VEGAS!!!

It was a great first day at the big show . I made some really good connections , and met some great people . I saw my friend Les Johnson , from the tv show Predator Quest , and had a great visit ,at the Bushnell booth. I will hunt spring Turkey with him ,in late April. in Kansas. We also talked, about me appearing, as a guest chef on his show ,a couple of times this season , to mix it up a little bit. I also visited with Jim Shockey , a world renowned hunter , about a guest chef spot, at one of his bush camps,, in Canada. Gary Lewis was also there , and we visited a bit in the Press room, about a good friend ,of us both, that had passed away overnight, in our home town. Being at a show of this size , is a shock to the senses, about how big the Outdoor Industry really is.Tomorrow will be even better , so I will keep at it , for 3 more days. This is an International show , so as you walk around, you hear , and meet people from all over the world .

WOW!!!! is all I can say . Media Day at the range , was a thing to behold . The air was thick, with the smell of gunpowder, from hundreds of thousands of rounds sent downrange. It was like being a kid in a candy store. I shot a variety of weapons, from machine pistols, to the finest assault rifles on the planet. Then on to a fully automatic AK47, to a restored gold plated, Gatling gun from the old western days Check out the videos on this blog.. The rough bar lights were flashing , on the Coast Guard tower, but we trolled with a few other boats on the north side ,hoping for a bite , and hook up . We were using blue died ,cured, large, plug cut herring, and heavy lead, to keep it on the bottom , because that;s where the big ones are . One more pass out as far as we dare, and I watched my rod start to bounce, and then it was FISH ON !!!!!!!!!. I knew it was a big fish right away , but it skittered across the water and got tangled up in another boats lines, 3 of them . The guys were nice, and let me have slack lines, so I could fight the fish . I was quite a battle with the outgoing tide, the large rolling waves, and the other boat next to me, waiting to get their tackle back . At one point, I considered cutting the line ,but then it became a quest, to land that fish, no matter what . When I finally wore the huge chinook out, and he came up sideways,to the surface I saw how big he really was ,and he made one last dash to freedom ,before my fishing partner, Steve,guided him expertly into the net. We did a quick HIGH FIVE , and cut the other 3 lines,bait , and lead , off of the fish'es head ,thanked the other boat for their courtesy, and got out of the danger zone. We put it on the scales and it tipped them at an even #40 .It was time to get out the Kershaw Pro Grade fillet knives , and get to cutting.

I love to make jerky from a lot of different meats . I use HI MTN . products for the perfect finished product, every time. A lot of people turn up their noses at goose meat , but with HI MTN.cures and seasonings, it is very delicious. I seasoned and cured my goose meat , for 24 hours and then put it on the Traeger ,smoker for about 4 hours.It came out perfect , and will make for great snacks,with cheese and crackers, or just a hunk of jerky, over the long Thanksgiving Holiday weekend..

This AWESOME, new product ,by Camp Chef , is a great new addition to a home emergency preparedness plan, or for your wall tent. This thing is SOLID . I was amazed by the quality of the workmanship, and accessories. It comes complete with 10 feet of stovepipe with damper, and spark arrestor . This one shown with optional 3 gallon 20 gage stainless steel water tank, for cooking or drinking water,with brass spigot, that fits on the side, of the stove. A stovetop great for cooking and racks to dry clothes or ?, complete the package . It all fits inside the stove, for easy handling. Steel bottom grate, for the stove, will make it easy to clean out ashes, and protect the bottom of the stove. The door and latch are nice, and it has a nice damper system, to adjust the burn. I can not wait, to get out in the woods, to use this stove ,or for the power to go out, so I have to use it at home.

Fall and winter in Central Oregon provide a great season for Pheasants, Chuckars, and Canadian Geese.I love to hunt and eat birds . I look forward to the big freeze, to bring all of the waterfowl to the Deschutes river, when all else freezes over . Then it is HAMMER TIME. !!!!!!!!

I was honored to be asked to cook for this annual charity event, for the second year. Brats and Pork Loin were the meats of the day. I was a bit nervous when I saw all of the people in the banquet room, but trusted myself to know I had enough food prepared. It was a great event and brought in money to help the fine charities the Kiwanis support.I was excited ,when they introduced me to the crowd,but they all clapped and cheered ,so I felt as I had done a good job.

I wish they had these ,back when I used to ski a lot . I was always hard to walk in ski boots , but this new product is awesome. It also protects the sole of your ski boots, so they fit tight in the bindings. Back in the day , a walk to the car in the lot ,could damage your boots, and be a safety hazard , when you stepped back in your bindings. The gouges from the gravel could cause your bindings to not work properly. This new product has traction soles on the bottom and makes walking easier . A nice carry bag comes with it also . These are used by the US, SKI TEAM so you know they Really Work, and are not just another useless product..

I finally got to the Hooker Creek event center, for the big show, this last wknd. Some of the heavy hitter monster trucks, and some local freestyle riders were there to perform.. I went with a pal and his young daughter , and we had a ball. They had a monster truck you could ride on so me, and my pals daughter went for a ride. I love horsepower, so the engines on the monster trucks, had me wound up, and the smell of the fuel filled the air .

I use my Camp Chef 60,000 btu single burner for the heat source. It only takes a few minutes, to get the oil hot, and ready for that JUICY TURKEY!!!!!MMMM!!! . I get the oil to 375f, and then slowly dip the bird in till the cavity fills up with oil also. This will help avoid ,the dreaded !!!!! turkey cooker fire. I hope this will help anyone, who wants to deep fry a bird, this holiday season. Two minutes per pound is the reccomended time ,and I have done enough of these birds to know, that is a correct time, because you do not want to have an undercooked bird. I could go into a lot more detail , about injecting , and seasonings, so if you have any questions, email me, and ask ,please.

I had some gift cards for a charter boat out of Newport Bay on the Oregon coast. I called my cousin Stevie ,a former recon Marine, and now a train conductor for the UP ,to come with me . He had a few days off so he came over the mountain for an adventure. for $10 dollars more they would put out some pots in the ocean to pick up when we came in. There were only 4 of us on the boat so it looked good for a few KEEPERS.When the young female deckhand,Marybeth, started struggling to pull the heavy crab traps up. we all helped pull them in the boat and they were full to the brim .The fishing was ok but we made up for it in GIANT KEEPERS, and we headed home with a few fish to fillet , with my Kershaw Pro Grade fillet knives , and some AWESOME crab to boil up in my 60,000 btu Camp Chef single burner stove . With some melted garlic butter ,we would have a feast to behold.

It is always a good time to make sure you have an emergency kit.

I got the last spot on the SIIGGI-G charter boat ,out of Garibaldi harbor, in Tillamook Bay ,a couple week ago. The weather report was good . but you never know how the MIGHTY PACIFIC OCEAN will be until you get out there. We left in the early dawn and things looked good. After crossing the bar we headed out at a good pace to the fishing grounds on the deep reef. I love to catch ling cod,and they are the best eating of most of the other species of bottom fish ,with exception to halibut. I was nearly giddy with excitment ,when Captain Joe, said to get ready. When half of the people had a fish on before they got to the bottom , I knew this was going to be a GOOODDDD DAY . We were using a 16 ounce lead jig with a nasty double hook on the end, and 2 other hooks above with small plastic baits. I know because of experience in Alaska, that the BIIIGGGG LINGS are right on the bottom in thier HIDEY HOLE . When that lead jig bounced off the rocks, it rang the dinner bell for all of the hungry LING COD. I have been on many charter boat fishing trips from Hawaii, to Mexico, to Alaska, and have to say that Captain Joe, and his crew did an AWESOME! job from start to finish ,even having shaved ice for our catch , after being filleted by the best knife men in the harbor. I August Outdoor Chef Kurt was invited by a friend Sam on a tuna expedition out of Newport Harbor.The Ocean was like a BIGGGGG!!! lake and it was a fast ride to the BLUE TUNA WATER. I used a daisy chain . which is supposed to imitate a school of shrimp , and it was FISH ON !!!!!!!!!!!!!!!!!! . It was like nothing I have experienced , with 4 tuna on at the same time ,it was like a fish dance, to get them all to the gaff. ELK CAMP 2011 LUNCH // SIMPSON ELK RANCH

I was a great day for ELK CAMP . People were there early, and ready, for the seminars, and speakers to start, but what they really wanted was lunch from OUTDOOR CHEF KURT .All of my sponsors ,gave me prizes to give away ,so I was excited to be part of the event. I grilled up the bacon swiss burgers on a vintage Camp Chef charcoal grill , while my wife cut up the condiments with my Kershaw /Shun Knives. .I fried the fries in my Camp Chef single burner 60,000btu cooker , while my Smoke Vault became a warming oven, for onions ,sauted on the 20 inch Lumberjack Skillet, and the burgers, and fries. Between seminars the participants perused my awesome display of my fine sponsors products, testing the Kershaw/ Shun knives looking thru the Alpen Optics, and sniffing the HI.MTN. Seasonings in the containers, and wishing they had a Camp Chef Triton hot water heater in their own ELK CAMP. They lined up for lunch, and dessert of peanut butter chocolate brownies, with whipped cream, and fresh blueberries. and all left with full plates and dreams of their own ELK CAMP outdoor cookouts.

Oysters on the grill for a special night.

Here is an Awesome new recipe from

OUTDOOR CHEF KURT"S super secret recipe book.

Start out with a dozen fresh medium oysters.

Put the oysters on a hot grill until they pop. Step One, get out your ingredients which include, lemon wedges, Tabasco sauce , melted butter, garlic powder or fresh minced garlic, bacon bits and cocktail sauce. Also fresh shredded Parmesan or sharp cheddar shredded.

Once your oysters pop,shell shuck them with an oyster knife making sure to keep the inside clean of shell bits or other debris.Now it is time to build your finished product.

Start out with the melted butter .

Pour a little on top of each oyster and a little in the inside shell for the liquor.

Then put a drop or two of Tabasco on each oyster according to taste.

Next squeeze a few drops of fresh lemon juice on each oyster.
Then sprinkle on a little garlic powder or fresh minced garlic on each one.
Sprinkle on a few fresh bacon bits,Pour on a little cocktail sauce and top with shredded cheese of your choice.

Final Step: put the oysters back on the grill for about 5 minutes till cheese melts and liquid forms in shell from all ingredients, called the liqueur. Then place oysters on a platter and prepare to have one of the best food experiences of your life. A glass of wine makes a great compliment to this dish, I recommend a nice Oregon PINOT NOIR as a good pairing to this dish.

Pinot Noir, Willakenzie 1st choice Triple Black Slopes, or the regular Willamette Valley is tasty. Try them tonight!

This recipe was invented by OUTDOOR CHEF KURT in ALASKA at TALAVIEW LODGE this last summer.

I usually serve 3-4 spears per person.On a 1/2 sheet pan lay your spears .

Then cover liberally with balsamic vinegar and roll to cover completely.Fire up your TREAGER or any other grill and get it hot .

Then season spears with TREAGER veggie shake roll to cover completely with seasoning.Then place spears on grill and roll every 3 minutes to cook evenly Spears should be done in 8-12 minutes Taste for desired texture, take out early for a slight crunch and serve and be ready for people asking for more BON APETIT !!!!

Billy Williams , a local musician was at the helm of his guitar and the crowd, loved his music. I just got back from up north in time to compete in the St . Paul 4th of July Rodeo annual BBQ COOK OFF . I got my baby back ribs at noon, with pick up time at 5 pm . There were some big time competition teams, at this prestigous event , so I was a little nervous , about my chances for victory or placing in the top places , but I used my culinary skills to do my best. When they announced that my small team, of my wife Anita and me, called {SMOKIN ON THE HIGH DESERT } was second place winner , I was very happy to accept my trophy. Big Kings up North in Alaska With RECIPE for Salmon Olympia

Outdoor Chef Kurt just got done with his first group of clients at www.bigdavesfishing.com, 9 guests for 6 long days.

Two beaver float planes took them home today.

I even got to fish long enough to land this 38lb the first night out!

The fishing and lodge is awesome with all the great scenery and wildlife around. We saw a Grizzly bear following a moose cow and calf. The bald eagles are like sparrows up here on almost every tree lining the water.

The Kitchatna River runs in front of the lodge with many crystal clear flowing into the river. Many giant Rainbow and Dolly Varden are abundent in the creeks and rivers. This is a true fishing wonderland.

Everyone had a great time and two more groups are due to show up tomorrow and some next week. This is truly one of the nicest places I have worked up in Alaska and you can really get a great deal on trips right now. Tell them Chef Kurt sent you and they will take care of the rest.

We did Salmon Olympia,

RECIPE

Sprinkle Johnny's Seafood seasoning all over the salmon filet
Cover with thin coat of mayonnaise (this is called a Mask)
dust the filet with a light coating of shredded parmesan cheese.

Second layer, use a light layer of Cheddar Cheese.

Then one more layer of parmesan cheese and bread crumbs.

Put on Tin foil Bed, on grill skin side is always down.

Grill till cheese melts and bread crumbs start to turn golden brown, judge cooking time by filet thickness and initial meat temp.

Serve with Long grain wild rice and some sweet peas.

A sure fire way to please a large crowd.

Hula Hula Keg Roaster Chicken
Ingredients

Camp Chef Keg roaster and Stove

or use the twins in the picture above...

3 whole fryers Cleaned and tail cut off.

3 cans Beer

1 can circle Pineapples (and toothpicks)

3 Large Zip Lock bags

Brown Sugar box

Teriyaki sauce Large bottle

Ginger (fresh or powder)

Pepper

Old Bay Seasoning

Cooking Instructions

Put one fryer in each ziplock add 1/3 box brown sugar, 1/3 Large bottle Teriyaki (low salt preferred)
1 tsp. Ginger
Refrigerate overnight

Put on Keg roaster with Open beer below (drink 1/3 of each - Chug for visual effect)

Season the Chicken with Old Bay and pepper - shake from the top to bottom.

Pin the pineapple to the sides/top of each chicken and start cooking.

Cook for about 66 minutes and check the temp of the chicken with a push in thermometer.

Let Sit for 5-7 Minutes make sure everyone is looking.

Act like you don't know what they are looking at...

Don't eat the pineapple or drink the beer...

CHEF RIAN MACDONALD BBQ Beer Rubs

BBQ Beer Ribs

BBQ Beer Ribs happened one night when I was planning on cooking ribs for dinner and started marinating the ribs in my homemade BBQ sauce in the fridge. I have made this dish before and noticed that the ribs were tough after marinating for 1 hour.

During my second attempt at making ribs, while they were marinating, my wife and I decided to watch a movie. Like we often do, we fell asleep during the movie and did not wake up until the next morning.

Having completely forgotten about dinner and the marinating ribs, I awoke the next morning in complete hunger. While my wife was still asleep, I opened the fridge searching for something to eat. I noticed the marinating ribs. Having nothing else to eat for breakfast, I went outside and fired up the grill to cook the ribs for breakfast.

Even though we still find it weird to eat ribs for breakfast, we still say that these ribs were some of the best we have had! Until this day, I still marinate my ribs over night and wait to enjoy the next day.

BBQ Beer Ribs

Ingredients:

8 country-style pork ribs, boneless (6 ounces each), trimmed
6 ounces beer
1 ½ cups spicy tomato juice
1 cup honey
1 teaspoon Worcestershire sauce
1 cup Chef Rian’s BBQ Sauce

Procedure:

1. Put all of the ingredients in a zip-lock bag and let marinate overnight.
2. Grill the ribs for 30 minutes.

Chef Rian’s BBQ Sauce

Ingredients:
16 ounces tomato sauce
1 ⅓ cups rice vinegar
½ cup brown sugar
¼ cup granulated white sugar
4 tablespoons sesame oil
2 tablespoons spicy mustard
2 tablespoons chili powder
2 tablespoons salt
½ tablespoon black pepper
1 tablespoon hot sauce
1 teaspoon grated cinnamon
1 tablespoon paprika
1 tablespoon fresh oregano, chopped
¼ cup Jack Daniels whiskey

Procedure:

1. Bring tomato sauce to a boil in a saucepan over medium heat.
2. Add all other ingredients, incorporate, and then reduce half way on medium heat.

Dale Jr. almost had that elusive next win, last night, in a dramatic finish ,that had him run out of gas on the last corner before the finish line . I am sure he was heartbroken , but can keep his head high ,because he is 4th in the points after 12 races. Harvick, THE CLOSER,stole the win, in what used to be Dale Sr car .ten years after his tragic death at the Datona 500.

Outdoor Chef Kurt Loves America .We are blessed to be able to pursue our dreams. Thanks to all of the men and women that serve our country , and allow us to go on with our daily lives. I recently had a chance to cook for some Marines ,here in Central Oregon . It was my pleasure to serve them. and thank them for all they have sacrificed, for our country. I think all Americans should be very thankful for all that these men and women do to protect our way of life. I pray for our soldiers every day , that they come home safe , and think that all of America should do the same.

REDMOND OREGON FIREMANS FISH FAIR 2011

Outdoor Chef Kurt had the chance to cook a pancake feed, at this years annual Firemans Fish Fair in Redmond Oregon this last weekend. It was sponsored by the local KIWANIS, of which I am a proud new member of. Young Girls were the early fish catchers , as the pond filled up with eager young fishermen and fishergirls. Kershaw Knives and Camp Chef outdoor cooking products, donated some cutting boards and fillet knives for 1st prize, in all of the age catagories. Fun was had by all who attended and next year we plan to make it better than ever. With catches of Largemouth Bass, Rainbow Trout, and Catfish , the firemen were amazed, at the variety of fish in the pond.

I love a good looking HOT ROD . A couple of weeks ago I was on my way to do some errands in town, and saw this event happening in the Albertsons parking lot. I stopped to take a look and saw some great looking cars and trucks from all over Central Oregon. Even a couple of RAT RODS were there , they are amazing, and have a lot of nostalga, to go along with some incredible engineering.

OUTDOOR CHEF KURT, loves to fish . A friend ,treated me with a fishing trip, and I got to go out with a guide on the Willamette River last week, and caught this nice Steelhead . It weighed #9 and was 29 inches long . A beautiful chrome bright fish . I used my Kershaw Pro Grade 9,1/2 inch fillet knife to do the honors, and it did a great job. Then I seasoned the fillets with some HI. MTN. Alaskan salmon seasoning , and baked it in the oven til Perfection was achieved. All of HI. The time has come for the BIG BUTTS !!! in shallow water off the coast in my OUTDOOR CHEF KURT super secret HALLY HOLE!!!!. Salmon carcasses and a good dose of HALIBUT FEAST SMELLY JELLY will make the bite come on even harder . Sea Bass and the occasional Ling Cod are also caught while Halibut fishing. A few Dunginess Crabs in the pots we put out, make the day even sweeter.A little work with my Kershaw pro grade fillet knives ,and the fillets are ready for fish and chips. When the ocean is nice you can get out and GET CHA SOME!!!!!!!
